Christmas Flashback: Frosted Sugar Cookies

No one can say no to a little sugar cookie with a Nebraska Husker Shirt on. This cookie came from Cookie Fest 2011 that my friend Belle put on. Along with Belle, Alicia, Samantha and Jenny we made several treats. I am going to release them in a 3 post series. Stay tuned because they are yummy as well as gluten free!!!

Part 1:
The Sugar Cookie:
1.5 cups butter, softened
2 cups white sugar
4 eggs
1 tsp vanilla extract
5 cups Gluten Free Flour
2 tsp baking powder
1 tsp salt

In large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder and salt. Cover and chill dough for at least one hour (or overnight)
Preheat oven to 400F. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with cookie cutters. Place cookies on parchment paper lined cookie sheet and place in refrigerator for 5 min. Bake 6 to 8 min. Cool completely before decorating.

Part 2:
The Frosting:
3 tbs butter, softened
2 cups powdered sugar
1/4 cup whipping cream

Add butter and powdered sugar to mixer and bead well until rough and crumbly state. Add cream a little at a time while beating. If too wet add more powdered sugar, if too dry add more cream.
