Family Christmas (3/3) - Blueberry Crumble

This year I was trying to be really adventurous with the different things I spent time baking/making. My family told me that they were tired of pumpkin pie because they had it every year and if I could come up with something else that would be great. My sister suggested a fruit tart but Nina had made one a few years ago and I really didn't want to compete. It was amazing. I saw in the Sprouts advertisement that blueberries were on sale and I really wanted to use them. So I scoured and found this recipe and I am so glad I did because it turned out great. I am really upset though because it turns out we forgot to take pictures. At the next chance I get I will make another and be sure to update with pictures.

Ingredients:
  • 1 1/2 cups flour
  • 1 1/2 cups sugar, plus a bit more for sprinkling
  • 1 1/2 sticks unsalted butter, melted
  • 4 cups of blueberries (4 8oz containers)
Directions:
  1. Pre-heat the oven to 350 degrees F.
  2. Combine the flour and sugar in the stand mixer.
  3. Attach the flat mixer. 
  4. Add the butter, mixing as you go, until the mixture forms a soft dough. It can be slightly crumbly, but you want it to hold together when you squeeze it. I had to add an extra 1/4 cup of melted butter to get the dough to be sticky. 
  5. Spray a baking dish with non-stick cooking spray. 
  6. Put the fruit in the dish. You want to create a thick layer that comes about two inches up the sides.
  7. If the fruit is particularly tart, sprinkle with a light layer of sugar. If the fruit is soft and sweet, you don't need it.
  8. Take the dough by the handful and pat it into disks that are about 1/4-inch to 1/2-inch thick. 
  9. Lay them on top of the fruit, continuing with the patties, until it is covered. 
  10. Bake the cobbler at 350 degrees F for about 45-50 minutes, until the crust is light golden brown. 
  11. Let cool slightly, then serve with ice cream.
